Commercial Description:  Hop Knife Harvest Ale recognizes the meticulous, time-honored tradition of hand-harvesting hops at the peak of maturity. Our HopCyclone process creates an inward spiral of hop dispersal during fermentation, releasing a bounty of citrus, resin and tropical aromas.

Editor’s Notes:  Hop Knife is Troegs’ fresh hop IPA (at least I think it is since it is a seasonal offering from August to October, although they don’t say it explicitly), and it is a good one. The aroma features pine and citrus with lemon and tangerine standing out. The taste is better than the aroma, with lemon and orange flavors layered on top of bready malt. There is a growing onslaught of bitterness that numbs your tongue by the end of the pour; this is where the hops make their biggest impression. Overall I would love to drink Hop Knife any time, although it doesn’t quite make it into my upper echelon of IPAs.
